Healthy lunchbox treat - 3 Ingredient Oat Bars

My little people are returning to school tomorrow (can I get a #whoopwhoop!) and I am SO excited to pack their lunchboxes again!

If you are anything like me,  you know the feeling of trying to appease fussy eaters while providing healthy brain food right? I got you!

When it feels like you have run out of options, whip up a batch of these Oat Bars and give yourself a pat on the back:

3 Ingredient Oat Bar Recipe

1 cup Oats
1 cup Peanut Butter
Half cup Honey
Baking Tray
Baking Paper

Method:

  • Heat up Peanut Butter on stove plate; you want to soften the Peanut Butter to runny liquid point without boiling it
  • Add Honey to the pot and take it off the stove
  • Stir in Oats
  • Add mixture to a baking tray lined with baking paper and even out as you would with fudge
  • Pop it into the fridge for half an hour and then cut into blocks

These delicious, high in fibre bars can be kept in your fridge for 4 days.

I often add the following to the bars to help keep the little ones surprised for weekend snacks:

  • Raisins
  • Chocolate Chips
  • Chopped Almonds
